Suzy’s Pumpkin Spiced Healthy Hot Chocolate Recipe

Don’t Skip the hot chocolate this year!

Ready in 15 minutes

Serves 1-2 people (depending on serving size).

Ingredients

  • 2 Scoops vanilla protein powder
  • ½ cup water
  • 1 cup unsweetened almond milk or milk of choice.
  • ¼ cup Pumpkin Spiced Almond Creamer.
  • ¼ cup dark chocolate chips
  • ½ Tbs. Pumpkin Spice or to taste.
  • 1 Tbs. Cacao Powder
  • ¼ cup coconut whipped cream (optional).

Directions

  1. Heat a pot (saucepan) on low heat. Pour in water, milk, creamer, and chips. Stir continuously until it starts to bubble (See tips).
  2. Turn off heat. Add in protein powder, cacao powder, and spice. 
  3. Mix well with whisk until smooth.
  4. Top with coconut whipped cream and sprinkle with spice or cinnamon (optional).
  5. Enjoy!

Tips

Be careful not to heat the chocolate too high on heat or you can burn it.

RECIPE- Suzy’s Semi-Healthy Pumpkin Spice Cookies

Ready in 35 minutes

Makes 12 large cookies

Vegan 

Ingredients

  • 1 cup flour & 1 cup wheat flour + ½ tbsp flaxseed (optional).
  • ½ cup granulated sugar
  • ½ cup brown sugar (packed)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pumpkin pie spice (Trader Joe’s)
  • 1 dash/pinch of salt
  • 1 cup organic (optional) canned pumpkin (Trader Joe’s)
  • 1 tsp vanilla extract
  • ½ cup applesauce (unsweetened)
  • ½ cup Pumpkin Spice Truffles (Toll House) or dark chocolate chips

Directions

  1. Preheat Oven 350 degrees.
  2. Prepare the baking sheet with spray oil to prevent sticking.
  3. Mix together the sugar, applesauce, and vanilla extract.
  4. In a separate bowl combine dry ingredients flour, baking powder, baking soda, slat, and spice.
  5. Combine both the wet and dry bowls and mix well. 
  6. Fold in truffles or chips.
  7. Bake for 15-18 minutes or until the toothpick comes out clean.
  8. Let cool for 5-8 minutes and Enjoy!
