Fluffy Buttermilk Pancake Recipe

I love a good pancake recipe! There is just something special about a fresh homemade pancake. Along my journey to finding the perfect pancake recipe, I came across the most yummy buttermilk pancake recipe by, Allrecipes. It’s an Allrecipes 5 star with 9,939 reviews. Of course I had to alter it a bit to make it my own, but the original recipe is just as delicious. I will share the link here to the original and then include my own alterations in this post.

When it comes time for you to add the egg and butter to your “soured” milk I also add vanilla. I add 1 tsp vanilla. Make sure you melt your butter as instructed in the recipe, otherwise your batter will come out lumpy and uneven. After combining the dry part of the recipe with the wet I always let it sit for five minutes. It might seem like a long time to wait to start making your pancakes, but it is totally worth the wait! If you wait your pancake mix will become really fluffy, resulting in much fluffier pancakes. While waiting you can heat up your pan and get your spray or butter ready to help with sticking.

Some add-in’s I like to add into my pancake recipe are: bananas, frozen or fresh berries, food coloring, sprinkles, and chocolate chips.  To add in the banana I take 1 over ripe banana and put it in a separate bowl and mash it. Then add it into the wet part of your recipe before combining to the dry. Banana pancakes are my fave!! At the same stage you can add in fresh or frozen berries. We usually use blueberries because they are my sons favorite. To make it more festive you can add food coloring for the holidays. St Patricks Day is just around the corner and a few drops of green food coloring would make for a fun leprechaun treat. If you want birthday pancakes add sprinkles after you have poured the batter onto the pan. Otherwise the color from the sprinkles will run when you try to mix it into a full bowl of batter. If you’re a chocolate lover like me sometimes I make chocolate chip pancakes. Again I add them after I have poured the batter onto the pan. If you add them into the full bowl of batter sometimes this will make them sink to the bottom of the bowl. It just makes it quicker and easier.

We like to top our pancakes with syrup, or frozen berries that have been warmed up and powdered sugar. That gets all the yummy juices from the berries going and make a good fresh syrup for your pancakes. We also eat them plain, which is great when you are on the go. Plain pancakes are also great if you have a toddler like me. I just give them to her plain to help with the mess of the sticky syrup.
