Suzy’s Holiday Pumpkin Energy Bites
NO BAKE/ VEGAN
Ready in 10 minutes
Serves 4 people (4 servings each).
Makes 20-24 balls (depending on size).

Ingredients
- 1 C rolled oats
- ½ C vegan dark chocolate chips or mini semi-sweet chocolate chips.
- ½ C ground flaxseed meal (Trader Joe’s)
- ½ C 16oz canned pumpkin
- ⅓ C honey or maple syrup (light- optional)
- ½ tsp vanilla extract
- ½ tsp cinnamon (see notes)
- ½ tsp nutmeg (see notes)
- 1 tsp pumpkin pie spice (Trader Joe’s) to replace the cinnamon & nutmeg.
- ¼ C orange flavored dried cranberries (Trader Joe’s) or regular cranberries
- ⅛ C coconut oil (for coating)
Directions
- Mix together ingredients, except coconut oil.
- After coating your hands with coconut oil, form 1” balls.
- Place balls into a freezer bag. Freeze 1 hour or enjoy now.
Notes
You can substitute the cinnamon and nutmeg for 1 tsp pumpkin pie spice (Trader Joe’s).
